Read Chapter 6 Section 3. It would be good to read sections 1-2, but in the interest of time, we are going to skip the Laplace Transform and you will just have to trust me that the Z-Transform is legitimate.
You may also wish to read chapter 19, Recursive Filters, in The Scientist and Engineer's Guide to Digital Signal Processing to get a less mathematical introduction to IIR filters.
